چکیده
In this work, alginate-chitosan microgel particles were formed at different pH levels with the aim of using them as viscoelastic interfacial layers, which confer emulsion stability to food systems. The particles’ size and structural characteristics determined laser diffraction, confocal microscopy (CLSM), time-domain nuclear magnetic resonance (TD-NMR). affected characteristics, larger lower levels. T2 relaxation measurements TD-NMR did not reveal differences in mobility within for levels, could have been related more or less swollen structure. rate adsorption sunflower oil–water interface differed between but equilibrium tension all systems was similar. Higher dilatational viscoelasticity obtained (3, 4, 5), G’ reaching 13.6 mN/m (0.1 Hz) 3. rheological regime transitioned from a linear elastic one higher pH. thicker, highly layer low pH, combination charges expected its performance during emulsification storage. As revealed by diffraction CLSM, droplet sizes emulsions 6 7 significantly increased 1 week CLSM examination bridging flocculation Nevertheless, presented macroscopic volumetric periods exceeding 25 °C. Surfactant–chitosan Interactions and Application to Emulsion Stabilization
Complexes obtained from the electrostatic interactions between chitosan, a cationic polysaccharide, and sodium decylsulfonate, an anionic surfactant, were characterized by their conductimetric and surface-active properties. Such surfactant/polyelectrolyte complexes (SPECs) present very interesting surface-active properties, even at very low surfactant concentrations (much lower than the critica...

متن کاملChitosan: Gels and Interfacial Properties
Chitosan is a unique biopolymer in the respect that it is abundant, cationic, low-toxic, non-immunogenic and biodegradable. The relative occurrence of the two monomeric building units (N-acetyl-glucosamine and D-glucosamine) is crucial to whether chitosan is predominantly an ampholyte or predominantly a polyelectrolyte at acidic pH-values. The chemical composition is not only crucial to its sur...

Microgel particles of cross-linked poly(NIPAM-co-acrylic acid) with different acrylic acid contents are investigated in solution and in the adsorbed state. As a substrate, silicon with a poly(allylamine hydrochloride) (PAH) coating is used. The temperature dependence of the deswelling of the microgel particles was probed with atomic force microscopy (AFM). The inner structure of the adsorbed mi...

An increase in ambient carbonaceous particle (CNP) levels has been found, potentially leading to significant environmental/health hazards. These particles will ultimately enter the oceanic environment and interact with dissolved organic carbon. However, a detailed mechanistic understanding of their behavior, transport, and fate in marine systems is still much needed. This study, using carbon bl...
